COLESLAW ON THE CORNER
PREP TIME: 15 MINUTES
TOTAL TIME 30 MINUTES
PLUS 1 HOUR TO CHILL
INGREDIENTS:
1 PACKAGE BAGGED 14-16 OUNCE SLAW MIX
1 TEASPOON SUGAR
1 TABLESPOON APPLE CIDER VINEGAR
⅓ CUP MILK (LOW FAT IS FINE)
¼ CUP SOUR CREAM
½ CUP MAYO (BEST FOODS/HELLMANS IS BEST)
¼ CUP DICED RED OR YELLOW ONION
1 TEASPOON CARAWAY SEEDS (OPTIONAL)
SALT AND PEPPER
METHOD:
IN A LARGE MIXING BOWL OR LARGE FOIL PAN
EMPTY THE SLAW MIX, ADD VINEGAR, SUGAR AND STIR IN THE MILK, ADD THE ONIONS, SOUR CREAM AND MAYO.
THOROUGHLY MIX, COVER WITH PLASTIC WRAP, AND REFRIGERATE FOR AT LEAST ONE HOUR. IF THE MIX LOOKS A LITTLE DRY SLOWLY ADD IN MORE OF THE MAYO, A DASH MORE SOUR CREAM, THEN SALT AND PEPPER TO TASTE. IF USING, THROW THE CARAWAY SEEDS IN AND TOSS AGAIN.
TRANSFER INTO A SERVING BOWL. COVER WITH PLASTIC WRAP UNTIL SERVICE TIME.
CRANE’S CORKSCREW PASTA SALAD
Lots of veggies, a light dressing and no meat--pretty good choice for most everybody. Great for a hot night, a good side for the Bar B Que, and maybe beef and chicken fearing vegetarian friends will show up!
Prep Time: 20 minutes
Cooking and Assembly: 15 minutes
INGREDIENTS:
1 LB Rotini Pasta. It comes in basic yellow or tri-colored. Either work, Your call.
1 Large Red Onion finely chopped
2-3 Bell Peppers, seeded and coarsely chopped
3 cucumbers, peeled, seeds removed and chopped
1 Bottle Italian Salad Dressing (non creamy)
1 small bottle McCormick’s Salad Supreme Spice
1 half cup grated parmesan or Romano cheese, or a mixture of both
|Salt and Pepper
METHOD:
Fill a pot with cold water, add some salt, and bring to a boil. Add pasta, cook for 7-8 minutes, stirring occasionally then drain.
Place the pasta in a large mixing bowl or foil pan, stir in the vegetables, then the dressing, the salad supreme seasoning and half the grated cheese. Toss until all ingredients are well mixed. Chill for at least one hour, taste and adjust for seasonings and then top with the rest of the cheese,
This serves a bunch of folks as an entrée and a bunch more as a side:
NOTE: While the rotini works great, penne or even small rigatoni can be substituted. I had a version of this with long pasta. It was ok, but the shorter pasta makes it easy to serve---and eat.
The veggies are personal favorites, but if you love celery, squash, grated carrots, etc. feel free to use them.
